Broccoli

Tasmania's volcanic soil and sea breezes result in brilliant broccoli - the most esteemed member of the brassica or cruciferous group of vegetables. This dark blue-green, curly headed vegetable is high in beta-carotene and contains vitamin C and folacin.

Selection

Choose heads with tight, bluish-green florets, avoid bud clusters that are open and yellow in colour or showing any signs of browness.

Storage

Broccoli is a flower - keep it cool and eat it soon after purchase within 3-5 days.  Store in a polyethylene or plastic bag in the vegetable crisper.

Nutrition

Excellent source of Vitamins A & C. Very good source of folate and Vitamin E as well as riboflavin. Full of glucosinolates that may have protective properties against some cancers.
